Unlike the vineyards, the olive grove has occupied the same site for more than fifty years.
The varieties present are those typical of the territory: Frantoio, Leccino, Maurino, Pendolino.
Decimated by the 1985 frost, it was replanted in 1989 with a denser and bush-grown sixth, producing an oil of excellent quality but of modest quantities.
Since 2000 we have therefore gradually returned to the traditional system of pot pruning, which is laborious but more suitable for our areas, and since 2020 we have adopted ‘simplified polycone’ pruning.
This technique, which respects the physiology of the plant, simplifies the woody structure by facilitating manual operations.
