We use the ‘Le Fonti’ oil mill in San Casciano, which we have chosen and reconfirm every year, despite the distance from our olive grove, for the quality of pressing it guarantees. .
The coppaia is the place where we store the oil.
Its name derives from the ‘coppi’, the ancient terracotta jars where oil was kept today replaced by steel vats.
It is made up of small rooms dug into the tuff of the hill in medieval times. The temperature is pretty constant inside them, but in winter we make sure that it stays above 12 ° C to prevent the oil from freezing and consequently losing quality.
