24 hours cold steeping for the grapes, pressing and cold cleaning of the must. The wines complete the fermentation separately, white malvasìa and trebbiano in steel vats at controlled temperature, chardonnay in oak barrels, where matures until January ‘sur lies’. Filtered and bottled in February, it is a Mediterranean white that can be drunk for two years after the vintage, preferably with a vegetarian menu
